I would really like a simplistic modern design. Something that is clean and easily recognisable.

I like the idea of a logo which is made up of a simple image with the use of the characters &#39;EC&#39; (Standing for Emerald Chef). 
I have included a hand drawn sketch of a logo. As you will see it is in the shape of an Emerald Diamond, with the letters EC built into the top using the Diamond concept. I am happy for you to make this more professional/artistic/polished or to change the idea. 
You will also notice the green running through the logo design, keeping in line with the &#39;Emerald&#39; concept. However at this stage I do not necessarily want to specify a particular colour or shade. Thank you.
